Mince the garlic. Combine the garlic, balsamic vinegar, honey, olive oil, italian seasoning, salt, and pepper. Pour over the chicken. Add cherry tomatoes to the sides of the chicken. Slice the large tomatoes and place the tomato slices on top.
Bake for 20-25 minutes or until internal temperature is 165 degrees. Add cheese to the last 5 minutes to melt. Garnish with fresh chopped basil if desired.
